Bacalao salad


Ingredients:

- 1 kg of dried and salted cod fillet Gadus morhua Bacalanor.

- 2 large onions in medium pieces

- 2 chopped garlic to put on top of the cod.

- 10 small potatoes

- 1 Red bell pepper cut into pieces

- 1 yellow pepper cut into pieces

- Extra virgin olive oil to taste

- Chili peppers, seedless, chopped

Preparation:

The first step is to desalt the cod fillets. This must be done 2 days in advance.

Dip the cod in a bowl of cold water and refrigerate. Change the water two to three times a day within 48 hours for big batches.

Cook the potatoes for 15 minutes and after they are ready, lightly mash them.

In a small roasting pan, place the cod fillets, potatoes and chopped pepper.

Cover the roast with another generous layer of olive oil and put it in the oven for 20 minutes and it's ready to serve!
